This Sheet Pan Chicken Cacciatore will have you singing the praises of your oven. Just pop it in the oven, super easy and bonus— only one pan to clean!
Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken thigh (about 6 thighs)
- 2 cups sliced mushrooms (about 8 ounces)
- 2 medium red, orange, yellow or green bell pepper, cut into 1-inch thick strips (about 2 cups)
- 1 medium onion, cut in half and sliced (about 1/2 cup)
- 3 cloves garlic, sliced
- 1 jar (24 ounces) Prego® Chunky Tomato, Basil & Garlic Italian Sauce or Cremini Pomodoro With Roasted Garlic Pasta Sauce
- 1/2 cup dry white wine (optional and can be replaced with additional sauce)

- Serving Suggestion: Serve the cacciatore with hot cooked pasta, potatoes or crusty bread.

Step 1
Heat the oven to 425°F. While the oven is heating, brush a rimmed baking sheet with the olive oil.

Place the chicken, mushrooms, peppers, onion and garlic into a large bowl. Add the sauce and wine and toss to coat. Season with salt and pepper. Transfer the mixture to the baking sheet.

Bake for 20 minutes. Stir. Bake for another 15 to 20 minutes or until the chicken is done. Serve before serving. Serve sprinkled with chopped fresh parsley, if desired.
