More bites for your budget
This one-skillet meal has the great flavor that you love about Chicken Parm but without the work. The best part is that the pasta cooks right in the skillet so that’s one less pot for clean-up!
Ingredients
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces (buy pre-cut to save prep time)
- 1/2 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1 jar (24 ounces) Prego® Traditional Italian Sauce or Prego® Tomato Basil & Garlic Italian Sauce
- 6 ounces (about 2 cups) uncooked rotini (spiral) pasta (the pasta cooks right in the skillet- a time saver and one less pot to clean)
- 2 cups Swanson® Natural Goodness® Chicken Broth or water
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese

Tips
- To add a crunchy breaded topping, heat the broiler (and make sure you're using an ovenproof skillet). Mix 1/4 cup Italian-seasoned dry bread crumbs and 1 tablespoon olive oil. Sprinkle over the cheese. Broil for 1 minute or until the bread crumb mixture is golden brown.

Step 1
Season the chicken with salt and pepper and sprinkle with the Italian seasoning. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until done, stirring occasionally. Remove the chicken from the skillet, cover and keep warm.

Stir the sauce, rotini and broth in the skillet and heat to a boil. Reduce the heat to medium-low. Cover and cook for 10 minutes or until the rotini is tender, stirring occasionally. Stir in the cooked chicken. Season to taste.

Sprinkle with the Parmesan and mozzarella cheeses (if you like, cover and let stand 5 minutes to melt the cheese).
